- 4 cups green cabbage, shredded
- 1 cup carrots, grated
- 1 cup red bell pepper, thinly sliced
- 1/2 cup green onions, chopped
- 1/2 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
Instructions
- In a large bowl, combine the shredded cabbage, grated carrots, sliced bell pepper, green onions, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, ginger, and garlic until smooth.
- Pour the peanut dressing over the slaw and toss until well combined.
- Top with chopped peanuts for added crunch.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
Notes
- For a spicier kick, add a dash of sriracha to the dressing.
- This slaw can be made a day in advance; just keep the dressing separate until ready to serve.
