Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrots, sliced bell pepper, green onions, and cilantro.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, ginger, and garlic until smooth.
  3. Pour the peanut dressing over the slaw and toss until well combined.
  4. Top with chopped peanuts for added crunch.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
