Ingredients

  • 9 cups granulated sugar
  • 2 boxes pectin
  • ¼ cup lemon juice
  • ½1 teaspoon almond extract

Instructions

  1. Sterilize your jars: Begin by washing mason jars and lids in hot, soapy water or run them through your dishwasher on the sterilization cycle.
  2. Prepare the fruits: Remove pits from the apricots and chop them into small pieces. Chop the fresh pineapple into small chunks.
  3. Mix ingredients in the crockpot: In your large crockpot, combine the chopped apricots, pineapple, sugar, and pectin. Stir gently to mix everything.
  4. Cook the jam: Set your crockpot to high and allow your mixture to cook for 120-180 minutes, stirring every 30 minutes.
  5. Check for doneness: Once the mixture reaches a rolling boil and the sugar has thoroughly dissolved, your jam is ready.
  6. Enhance with almond extract: Stir in the almond extract for that nutty fragrance.
  7. Blend to your liking: Use an immersion blender to achieve your desired consistency.
  8. Ladle into prepared jars: Carefully portion the hot jam into the jars and secure the lids tightly.
  9. Allow jars to set at room temperature for 24 hours before storing them in the freezer.
  10. Optional boiling water bath: If you’d like to store your jars on the shelf, process them in a boiling water bath for about 10 minutes.
