Delicious and moist Apple Pumpkin Streusel Muffins, perfect for fall with a delightful streusel topping.

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup diced apples
- 1/2 cup rolled oats
- 1/4 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flours, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the pumpkin puree, brown sugar, granulated sugar, eggs, and vegetable oil until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced apples, oats, and pecans.
- Divide the batter evenly among the muffin cups.
- For the streusel topping, mix together 1/4 cup flour, 1/4 cup brown sugar, and 2 tablespoons butter until crumbly, then sprinkle on top of the muffins.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.

- Store muffins in an airtight container for up to 3 days.
- These muffins freeze well; wrap individually and store in the freezer for up to 2 months.
- Feel free to substitute walnuts for pecans if desired.
