- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar

- 3 large eggs
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a greased baking pan.
- In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, toss diced apples with cinnamon, nutmeg, lemon juice, and brown sugar.
- Pour the cheesecake mixture over the crust, then layer the spiced apples on top.
- Bake for 45-50 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before slicing into bars.
