- 4 salmon fillets
- 1 cup apple juice
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, combine apple juice, honey, Dijon mustard, garlic powder, salt, and pepper. Bring to a simmer and cook until slightly thickened.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the apple glaze over the salmon fillets.
- In a bowl, toss the mixed vegetables with olive oil, salt, and pepper.
- Spread the vegetables around the salmon on the baking sheet.
- Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
- Serve warm, drizzled with any remaining apple glaze.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the glaze.
