Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, combine apple juice, honey, Dijon mustard, garlic powder, salt, and pepper. Bring to a simmer and cook until slightly thickened.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the apple glaze over the salmon fillets.
  5. In a bowl, toss the mixed vegetables with olive oil, salt, and pepper.
  6. Spread the vegetables around the salmon on the baking sheet.
