- 2 cups rolled oats
- 2 cups milk (or dairy-free alternative)
- 2 apples, peeled and diced
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, milk, diced apples, brown sugar, maple syrup, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the eggs and vanilla extract.
- Pour the egg mixture into the oat mixture and stir until well combined.
- If using, fold in the chopped nuts.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden brown and set.
- Let cool for a few minutes before serving.
Notes
- Can be served warm or cold.
- Great for meal prep; can be stored in the refrigerator for up to 5 days.
