Description

Ingredients

  • 1 cup apple cider
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened (for frosting)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a saucepan, bring the apple cider to a boil and reduce it to about ½ cup. Let it cool.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the reduced apple cider, and mix until just combined.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat together the softened butter, powdered sugar, vanilla extract, and ground cinnamon until smooth and creamy.
  11. Frost the cooled cupcakes with the spiced buttercream frosting.
