Description
Al Pastor Chicken Skewers are a delicious and flavorful dish inspired by traditional Mexican al pastor. These skewers are marinated in a blend of spices and pineapple, then grilled to perfection.

- 1 lb chicken breast, cut into cubes
- 1/4 cup pineapple juice
- 2 tablespoons adobo sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup diced pineapple
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine pineapple juice, adobo sauce, chili powder, cumin, garlic powder, onion powder, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade and let it sit for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and diced pineapple onto the soaked wooden skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For extra flavor, you can add bell peppers or onions to the skewers.
- Serve with fresh cilantro and lime wedges for garnish.
- These skewers can be served with tortillas for a complete meal.
